Apple cinnamon steel cut oatmeal

I make this at least once a week. It's so yummy and you can ad lot of extras to it. Raisins, nuts, dried fruit etc. You can even freeze it!

There's a newer cookbook out (published October 1, 2011) called The Vegan Slow Cooker. There are some fabulous recipes in it! I used my slow cooker all the time before becoming vegan and didn't want to give that up. Check it out!

Italian Lentil Barley Soup
1 cup lentils
1/3 cup pearl barley
1 cup carrot (chopped)
1 cup celery (chopped)
1 cup onion (chopped)
2 garlic cloves (minced)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1 bay leaf
3 1/2 cups broth
2 1/2 cups water
14 1/4 ounces Italian-style tomatoes or 14 1/4 ounces regular stewed tomatoes or 14 1/4 ounces crushed tomatoes
2 tablespoons cider vinegar (optional)

dump everything into the crock pot and cook on high for 6 hours or low for 12.

I also added a little bit of tomato juice I'd had left over from another recipe and I used homemade vegetable broth

I have a wonderful book called "Fresh from The Vegetarian Slow Cooker" that I LOVE

And another one that I just got recently so it's not completely tried and true but the first two recipes I tried were great:

Smoky Slow cooked Roman Beans

1 lb dried roman beans
2 dried ancho peppers
1 large onion, chopped
3 tbs chopped garlic
1 tbs instant espresso powder
1 tbs truffle oil (optional)
½ c honey
1 jalapeno pepper, chopped
1 bay leaf
1 tsp dried thyme
1tbs powdered mustard
1 tsp salt
¼ c ketchup
1 tsp liquid smoke
1 c water

Soak beans over night, rinse and drain.

Boil the beans alone on the stove top for 10 minutes to soften slightly. Drain and put in the crock pot

Discard dried pepper seeds and add all ingredients to the crock pot.

Cook 4 hours on low, adding more water if needed.

I left out the oil, added more water from the start, and left this cooking for about 8 hours, not 4, and it was still great.

I had this same question about a month ago that I posted on the Calling All Vegetarians and (Vegans)! team forum. I received some excellent responses of either recipes themselves or websites listing multiple recipes. It is within the Veg'n Food, Products, Nutrition & Cooking discussion forum and it entitled "Veg Slow Cooker meals"

Crockpot Corn Chowder

3 (12 ounce) cans whole kernel corn - drained
3 cups vegetable broth
4 potatoes, diced
1 large onion, diced
1 clove garlic, minced
2 teaspoons salt
1 tablespoon parsley flakes
black pepper to taste
1 3/4 cups milk or soy milk
1/4 cup butter or margarine
2 teaspoons parsley
3 stalks celery chopped

Place all ingredients into the crockpot, stir well and cook on low for 6 hours. Add a bit of cornstarch slurry when done if you want your chowder thick. If not, enjoy !!

Serve in bread bowls ! YUMMM

I found this recipe in the newest Hungry Girl cookbook...I was pretty impressed with how it tasted. Its also pretty spicy which I love!

Chunky Veggie Pumpkin Chili
From Hungry Girl 1-2-3

•One 28-ounce can crushed tomatoes
•One 15-ounce can pure pumpkin
•2 teaspoons chopped garlic
•1/2 tablespoon cayenne pepper, or more to taste
•1 teaspoon chili powder
•1 teaspoon pumpkin pie spice
•1/4 teaspoon salt, or more to taste
•1/2 teaspoon ground cumin
•One 14.5-ounce can diced tomatoes
•One 15-ounce can chili beans (pinto beans in chili sauce), not drained
•One 15-ounce can black beans, drained and rinsed
•1/2 cup canned diced green chilies
•2 cups chopped portobello mushrooms
•1 1/2 cups chopped zucchini
•1 1/2 cups chopped onion
Add crushed tomatoes, pumpkin, garlic and all the seasonings to the crock pot. Mix well. Add diced tomatoes, both types of beans, diced green chilies, and all the veggies. Stir thoroughly. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours.

Makes 6 servings.

Nutrition: 131 calories, 1 gram fat, 515 mg sodium, 25 grams carbs, 6.5 grams fiber, 6.5 grams protein.

Since I've become vegetarian, I have not used my slow cooker. I've found very few recipes to use.
