I hate the traditional thanksgiving foods so Instead I am going to eat what I want and not feel obilgated but the thing I like do is walk and think of things I am thankful for. I will ask my 5 year old and do some special things with her and go for a walk I will end up eating some vanilla ice cream and being happy

I never understood why so many people are worried about one day. It is only one day guys and not even a day but one meal (granted that meal can last all day). Go crazy, have a good time. As long as it doesn't go further than Thursday, enjoy the day.

Trust me, if you have been eating clean and watching your intake, your body will definitely tell you when it had enough. I remember last thanksgiving-- it was the first where I really wanted to stay raw, but my sister had made reservations at the club. Dinner was a huge buffet. We had some appetizers at her place with our mimosas and watched the parade. About 2:00 PM we went to dinner. Sure I overindulged but it was still ok because I knew the next thing I put in my mouth the next morning was going to be healthy. I actually did three green smoothies the next day.

So please don't let one meal on one day turn you inside out. unless this one meal on this one day throws you off track the rest of your life, get over it.

Thanksgiving has never been the same since mom died and we sold her house. One of my brothers and his wife are now vegans. The other brother and his wife are carnivores. I offered to make dinner this year at my house. My vegans suggested that I make a regular dinner the way mom used to make and they would bring something with protein for themselves and for anyone else who would like a taste. They will eat all the side dishes which I will make as healthy as possible. I am really looking forward to being together. emoticon

@Chesapeake: you can also bake pumpkin pie filling without the crust, like a custard. You can do it in individual serving dishes for a really nice presentation. It's so easy. And without the crust, you can afford to dollop on some real whipped cream (not the stuff from the can, please!! lol). Other desserts: baked apples or pears. Core them and stuff the cores with raisins, dried cranberries, nuts if you like, drizzle with a little melted butter or coconut oil for vegans, and bake until soft.

Sometimes I make a pavlova, which is a giant meringue base, topped with berries, whipped cream optional. Looks very fancy!

I am going to take a Zantac and enjoy my day - fattening food and all! I took that week off from work so I will be able to do alot of exercising. But I certainly will not skip out on an annual good meal.

Now that being said, I am making a couple healthier options available this year. I am going to add carrots and wild rice made in a healthy manner.

We do have two people who need to eat gluten free so I have to watch what ingredients I use.

For a somewhat healthier dessert, we choose sweet potato pie with some fat free whipped topping. Better than some of the alternatives. I will still have banana creme pie also. I might just look at it though and still gain a pound!!!

Not going to worry about it. One day off plan is not going to hurt me calorically but i probably won't go off plan because potatoes, rice, and dairy just don't do my body good.

Probably will be by myself as i am not going home this year. Just started a new job in a new state and can't take the time off. Working for the financial world, the market is open the day after Thanksgiving which means I have to work.

My best Thanksgiving memories are those when the family gathered together at my parents' home. Thanksgiving was such a special holiday for my mother. She wanted the whole family to be together. She left this earth in 1992, and Thanksgiving has never been the same for me.

I love the fuss... and love the cooking. i just fill the table with people I know who will be alone... but I take a few shortcuts and I'm not too proud to let someone else bring goodies too... and the left over pies go home with the guests.

I find that when I'm doing most/all of the cooking I get so full on smells that I dont' ever overeat... it works!

Chesapeake60, not to worry about baking can even buy pie crust, all ready made and ready to use. Just look in your supermarket cooler...or ask them for it. Or, if you prefer you can get phyllo pastry dough and use that. I bough some phyllo already formed into miniature cups just last week. Great for apple pie mix...just add whipped cream and you're done!! I'm planning to do that for our Thanksgiving this year at my daughter's...just waiting to hear how many people are coming.

Whoops, my bad! I should have specified that dessert ideas should NOT include flour or any type of dough making as I am NOT a baker.

But I thank you for taking the time to give me ideas. And actually I really like the skinnytaste one. I love her site so don't know why I didn't think to look there. But the pumpkin pie looks very doable even with my limited skills. Thank you!

Chesapeake I think I'm going to end up doing dessert for my aunt's dinner, so I was thinking of doing little mini pies in a cupcake pan, sorta like these, but in apple, pecan, and pumpkin:
ni-cherry-pies.html I like them because it's built in portion control, plus they're so cute!

But, depending on my work schedule that week, those might be a bit much work to do (to get all the pretty detailed lattice work etc, so I also have these apple pie cookies (which are more like hand pies) that looked good too http://traceysculinaryadventures.blogspot.

I am not a pumpkin fan but I have this recipe for a skinnier version of pumpkin pie

I am doing a mini Thanksgiving for visiting friends the day before Thanksgviing. Will go to older daughters for the actual holiday. So for the pre- thanksgiving meal I am going to do the stuffed Cornish Hens with Apple-Pecan Stuffing from the SP cookbook. Serving with baked sweet potatoes and green beans. Should be seasonally appropriate and very healthy. Now I just have to figure dessert out. Ideas anyone?

This last year there was only 3 of us, so I made a turkey breast roulade instead, it involved a really delicious stuffing with figs, sausage, etc. Here's the recipe if you're interested:

This year we'll be at my aunt's house, but she said they're not doing a whole turkey. She's going to make a few breasts and a few pork tenderloins (my cousin's kids don't like turkey), and my uncle will grill them. She's getting older and making a full turkey dinner is too much work for her these days. The rest of us will be chipping in and bringing a dish or two of our own.

In the end it's not about what you're eating anyway, it's about spending the day w/ your loved ones :)

This year, I'm preparing mashed potatoes for Thanksgiving this week placing them in freezer containers and freezing them along with foods I can prepare and freeze ahead of time and freeze.. such as the green bean cassarole, I'll add the Durkee onions after I reheat it ,that way I can bake the turkey, make a salad, and reheat the frozen sides. I'm the only person in the family that still cooks so everything homemade is on me. I do cheat a little and will buy the pies in the bakery dept. and warm them in the oven before serving.

Even if you focus on just the basics, I know, they start to add up as you take into account "everyone's favorite" Thanksgiving dish.

We have bought a precooked deep fried turkey the past couple years. That way all we have to do is reheat it. That saves some stress. We do mashed potatoes, stuffing, some other veggie and rolls. Usually others bring the extra sides.

Honestly, I agree with you. It's just so much and I don't even like most of it anyway. (I'd rather eat the turkey cold on bread.) Is there a way you can agree to do the turkey and one other dish and have others bring the rest? (or make the rest?) That way you aren't doing ALL of it?

I guess it depends on the most cherished food traditions in your family. Really, the basics of Thanksgiving can be pretty healthy - a roasted turkey, green beans, sweet potatoes. It could get tricky if your family is really fond of the green bean casserole or super buttery mashed potatoes, or loads and loads of desserts. There are some things it's worth having once a year and really savoring, just try to choose the favorites to make, and "healthify" the rest of it. All of the healthy cooking magazines and websites will have suggestions for lightened up Thanksgiving feasts this time of year.

We do Thanksgiving in October when my dad comes through town on his way to Florida, but he has been eating vegan since the beginning of the year, so it's turned out to be a non-issue for us this year. Instead of putting on a full spread, I went to the co-op and splurged on fresh figs and gourmet grapes and a few fancy cheeses and crackers (my dad will eat non-vegan when he's a guest), and we'll have some halibut or salmon for the main course.

and what are you going to do about it?? I wish I could do as I did when my kidlets were younger and I was too! It does get harder, I hate to admit it...but there's a lot of work to making the kind of meal I would like to offer my friends and family. Any suggestions??
