I love roasting my vegetables. Sunday I did asparagus with just a little olive oil, garlic, salt and pepper... they were so yummy! I had a friend over who had never tried asparagus before and was hesitant but enjoyed it.

Rutabagas are great as well. If you want a moister version, try cooking the root vegetables in a clay pot - yum!

I've been experimenting with roasting vegetables and did a caramelized onion on roasted brussel sprouts that was delicious.

I followed Chef Meg's recipe on p. 315. I used the red onion, garlic, carrots, turnip, sweet potato, parsnips and the seasoning.

Fantastic! I made this for a dinner party tonight from SparkPeople cookbook. The guests raved about it and took home the recipe. I even had some veggies that I had never tried before.
