12 large fresh basil leaves 1 1/2 pounds fish fillets-any kind of fish is fine 2 plum tomatoes, sliced thinly 1 (2.25 ounce) can sliced ripe olives, drained 1 lemon thinly sliced with skin on 1/8 teaspoon black pepper 1/8 teaspoon salt 1 teaspoon oregano ( or Italian seasoning ) Saute the scallions and garlic in oil until tender
Spray a 13x9 glass baking dish with Pam
Plase basil on bottom of baking dish Place fish on top of basil Sprinkle the salt Top with scallions and garlic. Then place tomatoes and olives Then add the lemon slices Sprinkle the black pepper Sprinkle the oregano ( or Italian seasoning ) Drizzle a little olive oil on top too
Cover tightly with foil and bake 425 degrees for 20 minutes

Add more or less of the veggies . More garlic if you like too.
This is the recipe I've used a lot for pollock or tilapia or whatever white fish I happen to buy. It's pretty good! Lemon and parmesan are really good on it, you won't need any tartar sauce or anything when you eat it.

Baked pollock is a really flavorful dish - particularly when pared with tomatoes and cheese. Yes, cheese on fish. Lush, rich, and ultimately satisfying.
2 (6 ounce) fillets pollock fillets 1 t sweet paprika 1/2 t fresh cracked black pepper 1/2 t garlic salt 1 small sweet onion, sliced really thin 1 small red/orange/yellow bell pepper, cut into strips 4 (1/4 inch thick) slices red tomato 4 slices Cheddar cheese or equivalent amount of parmesan and cheddar grated (low fat works wonders here)
Oil baking dish lightly with veggie spray. Season top & bottom of fish with paprika, salt & pepper.
Put thin layer of onion in pan, top with fish. Layer more onion on top, then peppers, then tomato.
Bake in a 350 oven until fish is JUST flaky, about 12 minutes. Top with cheese and broil until cheese is just browning. Serve hot with veggies.
