mixed greens, shredded carrot, frozen green peas, purple cabbage, radishes, some sort of lightened up creamy dressing (salsa mixed with sour cream is my favorite)

If it's for a full meal, I add black beans or grilled chicken or fish for protein. If I have leftover "taco meat" I'll use that. Grilled hamburger or chicken sausage works in a pinch, too.

romaine lettuce, red bell pepper, cucumber, boiled egg, fat free honey mustard dressing

I usually just do something quick and simple: 2 cups of spinach w/ 1 cup each strawberries and raspberries... I also like spinach, tomato, cucumber, black olives, and RF ranch... My favorite has to be taco salad, though--spinach, taco meat (turkey or ground beef, or even grilled chicken), RF cheddar, tomatoes, black olives, and a handful of loosely crunched baked Doritos. Can add corn and black beans, as well--probably would be good with red peppers! :-)

I make a delicious salad. I use spring mix, red onions, tomatoes, gorgonzola cheese, chopped walnuts or pecans, Seneca apple chips, and blackberries. I toss it all together with Panera Breads non-fat poppy seed dressing that you can buy at Target. This dressing is only 15 calories for 2 Tbsp. and it's delicious! If you want to reduce the calories remove the apple chips, but not the gorgonzola cheese since your body won't absorb the nutrients if you don't have some fat.

my favorite is simple. spinich with cut up cucumbers and a little bit of honey mustard [like 25 calories for the dressing]. plus some good grilled lemon pepper chicken..

My typical lunch salad has: mixed greens, spinach, shredded zucchini, red onion, shredded carrot, broccoli, red bell pepper, cherry tomatoes, celery, grilled chicken breast, some blue cheese crumbles and dressed with balsamic vinegar (I keep a bottle at my desk of a lower-sugar brand of balsamic vinegar since the salad bar at work uses one that seems a little too sweet for me.

I get the mixed green lettuce in a bag then add romaine for crunch. I add in carrots, celery, green onions, some type of seeds and then use vinegar/oil with a little sugar mixture.

I like all kinds of salads. Sometimes I make a salad that can last a while in the refrigerator and be pulled out any time. Three bean salad, red beet salad, cucumber salad. These also make nice toppings for a green salad and their oil, vinegar and a little sugar dressing keeps me from adding too many calories. When it is hot, I like to make a salad bar for dinner. Toppings: hard boiled egg slices, rinsed chick peas, sunflower seeds, shredded low fat cheese, peanuts, chow mein noodles. It is fun to do.

I have a few go-to salads:
1) romaine and spinach with tomato and cucumber (sometimes I add carrots and/or black olives, and/or grilled chicken to this)
2) turkey-taco salad (romaine and spinach, tomato, black olives, ground turkey taco meat, and RF shredded cheddar cheese--awesome with a small handful of tortilla strips!)
3) spinach and berries (sliced strawberries, sometimes raspberries)

I generally go with a light dressing (light ranch, but not fat free ranch--fat free just doesn't taste right to me), a squeeze of lemon, or nothing at all (esp. in the case of the turkey-taco salad).
Today for lunch I'm trying #3 with Panera Bread poppyseed dressing, which I found at Target...but be forewarned, if you want to try it: it doesn't taste the same as it does at the restaurants (I worked in one for over a year...NOT the same dressing!!).

When I eat typical green salads I want to put way too much creamy dressing on them. So they aren't really a diet food for me and I only eat them when I'm out at a restaurant.

But I like vegetable salads a lot. I can eat this every day in the summer. I put chilled, cooked mixed frozen veggies [just thaw them if you like them extra crisp or used drained, canned if you prefer], dress with plain yogurt, spice with chopped onion and a dash of garlic powder and black pepper. For a main meal I add drained, canned garbanzo beans [just 1/2 a can] or cooked, shelled edamami to boost protein, or a couple of black or green olives. This is my idea of a good salad.

Romaine, celery, carrots, brussel sprouts, peas, baby corn, greek olives (just 3), orange pepper, leftover roast turkey breast with Wish Bone Spray Ranch.

I am finding that if I take a small amount of something I love (like greek olives or blue cheese), and I chop everything in the salad up small, it really goes a long way for only a few calories.

Spring mix or spinach, dried cranberries, almonds or pecans, apple, tomato, cucumber, red onion, mushrooms, sometimes bell peppers, and fat free feta cheese topped with a dressing made with EVOO and balsamic vinegar or EVOO and white or apple cider vinegar, a splash of maraschino cherry juice and a packet of splenda...oh sooo good!!

Generally: Romaine lettuce, some type of tomato (last batch was heirloom grape size tomato), carrot, celery, cucumber, dressed with a small amount of hidden valley light ranch dressing.

I will often vary the leaf depending on what's on sale at the store. I might add sliced almonds if I remember and if I need to add calories for the day.

Spring mix, shredded cabbage, carrot, celery, broccoli, green onions and tomato. I usually dress mine with either fresh squeezed lemon and diced avocado, or olive oil and apple cider vinegar. Depending on what else we're having for dinner, I might add sunflower seeds and/or feta or blue cheese and rarely some croutons or bacon bits.
