Thanks, MUTEDGREY! I really appreciate your help, and thanks especially for the dessert ideas! YUM! I love me some dessert! :o)

I will definitely check out this website you recommended. I need someone who can show me how to cook simply, and it sounds like this is a good source. The funny thing is, I know I am quite lucky to have both a stove and a microwave to be able to cook with. I mean, it's not like I am suffering here, but it's just that I often see healthy recipes call for baking said food in the oven. I would love to bake chicken, pork, fish, casseroles, and roast vegetables to reduce the fat content, but I can't. :o( Hence, the reason for this thread! So, thanks again, and feel free to add more ideas!

Some things that are traditionally "baked" can be done in the microwave, like baked potatoes (wrap them in plastic wrap first). You can of course do a lot of other basic things like grilled cheese or burgers, etc. Since you're in Mexico, how about quesadillas? I've always wanted to try paella too, but that's from Spain. You technically only need a stove to make it though!

There are some microwaveable versions of some pies, brownies, etc. on SparkRecipes so you don't have to suffer without (healthy!) desserts either! Many cream pies and other dessert items don't require any cooking at all. Here are a couple I saved or have eaten myself:
Sliced Baked Apple (Microwave)
Baked Fake Apple Pie (Microwave)
Single Serving Chocolate Brownie (Microwave)
Chocolate Peanut Butter Frozen Yogurt-no machine required

This isn't a specific recipe but I recommend checking out Hilah Cooking. I love her personality, being able to see her actually cook the food in her videos, she's understanding about vegetarian or other food restrictions, AND - the best part - she aims for beginner and intermediate cooking and tries to show you don't need any fancy appliances to make stuff. Sometimes she bakes some things, but many of her recipes only use a stove. She doesn't aim to be healthy but a lot of her stuff is decent and it's not hard to make substitutions, watch your portions, or use the sparkpeople recipe calculator to make adjustments.

Although I do have access to an oven now, I have lived with just a microwave or microwave/stove before, so I feel your pain. It's also always frustrated me when recipes call for a food processor or some other fancy appliance I have no hope of owning any time soon.

Haha, I'm sure you're having lots of fun with that! ;-)

Sadly, they don't carry plain yogurt down here least, not the unsweetened kind. I don't get it...especially since I live in a touristy area of Mexico, I would think I could find these things somewhere, but NOPE! I think maybe I need to start making requests at my usual store. Who knows? :-)

You're welcome! I always like coming up with solutions for cooking "dilemmas". Mine has been moving into my BFs house in May and working with his very "bachelor" kitchen, with my stuff still in storage for a few more weeks so I understand limited tools/resources, although at least I have an oven LOL

If you can get regular plain yogurt, you can strain it on a fine mesh strainer or cheesecloth so all the liquid comes off, and tada, you have greek yogurt! Seriously, that's all it is. Here's more info on that

Thanks YOJULEZ and SLOLOSER!!! I appreciate your help! It gets a little frustrating sometimes when I want to try a new recipe because sometimes I just don't have access to the same things here that you do there! For instance: Greek yogurt! No such thing down here!

This is a very simple recipe for oatmeal: 1/2 cup old-fashioned oats (the kind in the cardboard tube), 1 cup milk. Microwave for 6-8 minutes (depending upon your microwave) until you reach the desired consistency. After your oats are done, stir in a tablespoon of peanut butter and, if needed, a little sweetener of your choice (artificial or real). It's actually a good combination of heart healthy fats (from the peanut butter), whole grains/carbs with heart-healthy fiber, and protein. It also has a good amount of calcium.

There is no translation for quinoa in Spanish unfortunately. I also googled "where to find quinoa in Mexico" and this came up

Thanks again! All of your ideas sound good! Does anyone have any idea how "quinoa" translates into Spanish??? lol I live in Mexico, and as I have never eaten quinoa before, I don't know what it looks like uncooked. How do I know if it's really quinoa if it's labelled in Spanish? hahaha....if anyone knows, that'd be GREAT...if not, I will still try to figure it out. emoticon

Quinoa - normally cooked stovetop, you can also cook it in the microwave!

Great for salads, for breakfast, or even for dinner.
There are a ton of recipes for it over at SparkRecipes and very few use the oven.

Basically, you can cook it and just add your favourite veggies and serve hot or cold, but check out the recipes to give you lots of ideas!

beans & rice are a great one-pot meal. you can microwave rice, too, though to some that's blasphemy :P i think you can adapt most anything to work with what you have- you can always heat stuff on the stove instead of baking it or even toasting it- you can 'toast' on a pan! you can make enchiladas on the stove or even in the microwave- you'll have to make the filling separately but you can nestle them into a pan or microwavable dish! you can also pan cook egg rolls/burritos/etc.

Skillet lasagne. 1 cup of this is about 275 calories.... it makes a lot more than that so just watch your portion. It's delicious though, and is great reheated for leftovers. You can sautee some green beans with some shallots and olive oil to go with it:


1 1/2 tablespoons extra virgin olive oil
1 large onion, chopped
1 cup mushrooms, chopped
2 garlic cloves, minced
2 (14.5 oz) cans Italian diced tomatoes, drained
1/4 cup tomato sauce
3 basil leaves, chopped
1/4 teaspoon black pepper
1 teaspoon sea salt
1/2 cup skim ricotta cheese
1/2 cup part skim mozzarella cheese
3 tablespoons Parmesan cheese
About 6 ounces lasagna noodles, broken into thirds & fully cooked
2 tablespoons parsley (dried or fresh)

Heat oil in a large nonstick skillet over medium-high heat. Add onions and cook until softened, about 4 minutes. Add garlic and mushrooms and cook until garlic is fragrant, about one minute. Add in diced tomatoes, tomato sauce, basil, salt and pepper. Cook mixture until it thickens up a bit, around 5 minutes.
Add noodles to skillet and stir into the mixture well. Add scoops of ricotta cheese over the noodles; add in mozzarella and Parmesan. Stir in parsley. Cook about 2 more minutes, or until mixture is thick.
Serve immediately with additional basil or parsley.

Turkey Chile, 1lb of ground turkey, can of diced tomatoes, can of black beans, can of corn, chilli spices, 1/4 cup of water. I to use spicy diced tomatoes and diced jalopena.

I agree with JENMC14.

You can also make brown rice, oatmeal and pasta in your soup pot !

You can make endless variations of omelets ! or hard boil some eggs in your soup pot for egg salad.

Stir fry is the best !!

Cook some brown rice. Saute cut up chicken in a bit of oil until brown, remove chicken from pan and keep warm. Add veggies and a bit of water so they "steam" , once they are cooked add back the chicken and stir in some sweet n sour sauce or some teriyaki sauce. MMMMM !! serve it over brown rice.

Tacos - brown ground turkey in skillet on stove. Add in seasoning/sauce. You can heat tortillas in skillet as well. Add whatever otppings you want.

Burgers - make ground turkey into burger patties using whatever seasonings you enjoy. Brown in skillet. Add cheese when nearly done.

Stir-frys - Cut up chicken or use shrimp or meat of your choice. Brown, then add in veggies and seasoning.

Cook chicken or fish in the skillet. Steam veggies in microwave or in pot on stove.

Egg Scrambles/omlets. There's actually a TON you can do with just those two things. "Grilled" sandwiches. You can toast bread on the stove, too, using a similar method to grilled cheese. Pancakes, french toast, hashes, etc.

Hello all! I am in the market for healthy meals I can make in my kitchen with either my gas stove or my microwave. *PLEASE NOTE*: I do NOT have an oven, crockpot, grill, electric grill, toaster oven or toaster. Believe me, I would love to have at least one of these things, but sadly I do not. :o(

I often find recipes I would like to try, but they call for one of these appliances that I do not have at my disposal. Can anyone share some yummy, yet healthy, recipes that I can cook in the frying pan, soup pot or microwave? Thanks in advance!!!
