Vegetable Beef Soup

1 lb. lean ground chuck
1 28 oz. can petite diced tomatoes
1 cup pearled barley
2 medium crookneck squash
1 pkg. frozen cut okra
1 large diced potato
1 16 oz. can green beans
1 pkg. frozen lima beans
1 pkg. frozen corn
1 can tomato soup
1 medium diced onion
Salt to taste

Brown the meat, do not drain. This amount of fat is the only flavoring in a pot that will give you 18-20 meals. (very low content)
The barley neutralizes the tomato and onion, so there is no acid buildup. I have tried other combinations and never get the same great taste in this combination.
I put it up in single portion containers.
Freezes well for up to 6 months.

I've been making this regularly, trying to go as meatless as possible.

Basic Chana Masala:

1 can drained and rinsed chickpeas
1 small onion, diced
1 large roma tomato, peeled and diced
1 T tomato paste
1 T yellow curry powder
1/8 tsp ground cinnamon
1/4 bunch fresh cilantro, chopped
salt and pepper
Spray skillet with cooking spray. Over medium heat cook onions until translucent. Add chickpeas, tomatoes, curry powder, cinnamon, salt and pepper. Add enough water to loosen it all up (probably 1 to 1 1/2 cups). Heat through, check for seasoning. Finish by stirring in cilantro. Serve over steamed Jasmine or brown rice.

Fish tacos! Preheat oven to 400, place 1 lb fish fillets in baking dish sprayed with cooking spray (I've used tilapia, cod, and snapper, all delicious). Top with your favorite salsa and bake for 15-20 minutes. I like mine with avocado, corn, lettuce and a little cheese! My fiance loves these!

Crockpot Power Chicken (Clean Eating)

Boneless Chicken Breasts (Frozen)
Can of Corn (or better yet, Frozen)
Two Cans of Black Beans (Drained
Jar of Red or Green Salsa

Put the Frozen Chicken Breasts in the crockpot and dump everything else on top. Cook on low all day and serve over brown rice.

This is one of my all time favorites. Easy. Clean. Nutritional.

Brown sugar mustard pork chops! The sauce is also delicious over chicken. And its so easy to make. Just mix a bit of brown sugar with honey mustard, coat the chicken in it, then bake!

I love my stuffed bell peppers! Mild turkey sausage (removed from casings), wild rice blend, spinach, tomato paste! Yummy!

Salsa Chicken in the crockpot!

1 lb chicken breast
1cup salsa
2 tsp taco seasoning
1 can healthy request cream of chicken soup
1 medium onion, diced

Cook in crockpot for 6 hours on low. Add 1 cup low fat sour cream, and 1 can of corn (drained). Allow to remain covered on low another 1/2 hour. Shred chicken. Stir well.

Serve over rice.

This one is hardly a recipe at all, but it's delicious! Mix vanilla extract and a teaspoon of peanut butter into 1/2 cup if plain low fat yogurt for a great snack. For a meal use 1 1/2 cups yogurt and a tablespoon of peanut butter.

Wow, great recipes and ideas! Thanks everyone! I have a simple idea! Buy a bag of broccoli slaw and make a fantastic egg White, or egg beaters omelet! It tastes great! You can also add mushrooms and an ounce of your favorite cheese. If desired add low sodium salsa on top! This is really excellent! emoticon

I just made a recipe that is sure to become a favorite in my house, and though time consuming, was super simple. I just made some rice (I mixed 2/3 cup brown rice with 1/3 cup wild rice and added 2 cups water, simmered until cooked). I then spread this in a casserole dish, and place 4 frozen chicken breast over the rice, and spread a jar of salsa on top of the chicken and rice. I then baked at 350 degrees for about 40 minutes, and then grated just over 5 oz super sharp cheddar cheese over the whole thing. I then returned to the oven for about 10 to 15 minutes, and it was perfect. With 4 servings, the whole thing comes out with about 500 calories, but that is for a cheesy chicken dish with a side of salsa rice. 1 dish meal, which make my husband happy because he does the dishes. And with the rice and the lean protein, it was really filling for me so I didn't need more than 1 serving.

Very Veggie Chili - EASY and delicious! (**I got all the prepared foods at trader joes)
2 cans 14.5 oz stewed tomatoes (any variety - I use mexican w/ green chilis)
1 small jar of chunky style salsa (heat level to your liking)
1 can pink kidney beans (red is ok) **
1 can black beans **
1 can white beans (white, blackeyed or navy) **
(drain all beans)
1 small can jalapeño peppers - chopped fine **
half a bag of roasted corn **
half a bag of frozen tri-colored roasted bell peppers **
2 large carrots, finely chopped
1 large sweet onion, finely chopped
2 cups chopped zucchini
3 cloves minced garlic
4 Tbl chili powder
2 Tbl minced fresh or dry cilantro
1 cup of cooked quinoa (or barley)

Throw all ingredients in a crock pot and cook on med-high heat for 3-4 hours. Serve with shredded cheddar cheese, chopped onions and sourcream for garnishes. You can vary recipe to make it spicier by increasing the heat index on your salsa and jalapeños. I tend to use a bit extra chili powder and a few shots of "Franks Hot Sauce" - I put that ........ on everything. LOL

The chili is very low calorie, high in fiber and vegetable proteins from the beans and quinoa, so you can really do it up with the toppings and still have a healthy chili experience. I made this on Superbowl Sunday and it was a huge hit. As with any chili recipe, taste as you go to make it your own!

Mine I think so far is the Diet Coke sloppy joes: I used half ground beef, half ground turkey, I also use low sugar ketchup and splenda brown sugar. Not only does it help with calories, I used the recipes to take to my dad whom is diabetic. I have also used it as a topping for baked potatoes. The family loves it and that's a plus!

My favourite savoury recipe is crockpot spicy turkey. Its based on a chicken recipe on except that recipe uses chicken and I use turkey (because I raise turkeys!) I just pop a whole turkey thigh in the crockpot with some taco / fajita seasoning, garlic and a cup size jar of hot salsa. About half an hour before the finish of cooking time stir in some cooked black beans or (dry fried) egg plant or mushrooms then strip the meat from the bone in chunks. Very, very easy and lovely to come home to. I just have it with a mixed green salad and my husband has it with pasta and the salad.

My favourite dessert recipe is cheesecake - made with vff cream cheese, vff cottage cheese, vff fromage frais/quark and lemons - big servings and under 200 cals. The full recipe is on called - I think - Dukan New York Baked Cheesecake.

I can't do most of the Spark recipes. My favorite (personal) two recipes are for marinated flank steak and tarragon chicken. If anyone is interested, they're shared. I probably named them something beginning with "Vicki's". Both are tasty, simple, and quick.

I have been experimenting with different crustless quiche recipes lately. The one with egg beaters and cottage cheese is pretty tasty and calorically cheap. There is a nearly endless variety of stuff to stuff in it. My latest effort included 1/2 a package of turkey bacon and 1/2 an onion. I also have made it with a 1/2 package of the fake crab meat...Add a side salad and it is a meal! mmmm-m-m-m-m-m-m-mm-m-m-m-m-mm!

I love the "Roman Holiday Bake". My grandmother and I found this recipe in a womans magazine (I think Good Housekeeping) in the early 70's. We made it for the family and it has become a staple in my house. The directions in the original recipe was to add the noodles to the sauce mixture (or maybe my grandmother decided to do it that way). I have substituted ground turkey or ground elk for the ground beef and as long as my hubby doesn't see the package, he likes it. When my kids were little I used different pasta shapes to keep them interested.

I really love the southwest chicken and bean soup. I use ground chicken (or turkey) and also add some whole kernal corn. It freezes well, and makes the perfect lunch. I just pull a container out of the freezer and pop it in my lunchbox. It keeps the rest of my food cold and when lunch time comes a couple minutes in the microwave is all it needs.

I love Coach Nicole's Oat and Nut Chewy granola bars. I know it is not an entree, but it is the perfect granola recipe, it's my favorite snack! I love experimenting with the recipe as well. :)

The crock pot salsa chicken is great. I second that! This one is from Hungry Girl, not SP, but its SO GOOD. If you love Mexican food I highly recommend this one! Its pretty easy to make and taste like a million bucks

I LOVE the sparkrecipe for slowcooker chicken salsa!! Its so good and I like to make extra so that after my family and I all have some, there is still leftovers for during the week. Usually when I make it I change it up a bit, adding in some extra vegtables (almost like hiding them!)

Spark Recipe - Roasted brocolli - it is great. I have revised it slightly by using spray olive oil which reduces the amount of olive oil and makes the brocolli nice and crisp. Marvelous.

my husband makes this delicious pasta sauce that is olive oil, garlic, diced tomatoes, chardonnay, feta, shrimp, and spinach. He never measures anything, so there isn't really a recipe (I can't really complain, since it means I don't have to make dinner emoticon ). it seems to be as follows: dump a can of organic diced tomatoes into a pot with a drizzle of olive oil and some minced garlic, add a splash of chardonnay, simmer for a while. add precooked shrimp and crumbled feta and let feta melt and make the sauce a little creamier. drain pasta which has been cooking and stir pasta into (still hot) sauce along with a handful or so of fresh baby spinach, just to wilt it a little bit. It ends up being a simple, creamy, delicious red sauce. Also good without the shrimp, if that doesn't fit your fancy.

Honey & Balsamic Chicken....My husband really likes it,but he does not know what its called, if he heard the words "vinegar and honey" along with "chicken" he would not even try it! One of my favorites is the Renovated General Tsao's Chicken. I add extra veggies (broccoli cut in small pieces, snap peas, etc) and serve over brown rice. It is a crowd pleaser.
