Being a relatively new widow I was not sure how cooking for one would go. But I actually don't find it that hard. But then again I cook a lot of fish and most recipes are for 4 servings. I will broil 4 pieces of fish and eat it for 2 nights take a break. Then finish it e next two nights. So the sme thing with veggies. Will have 3 or 4 cooked and will rotate which 2 I reheat until they are gone. It means I only have to really cook dinner a couple of times a week.

I would find people to cook for! Even if you don't invite them over, if you try a new dish & it's a success, pack up a portion for someone who you know can't cook or doesn't enjoy cooking.
I have the same issues :( but 9 out of 10 times ill buy a big pack of chicken and pork and so on, Once home from store i take out storage bags breaking the packages up and then when cooking ill make meals for two and leftovers for the next day for lunch or dinner cuts back on time for me cause some days throughout the week i find myself unable to get to the stove with working hours.
