If a recipe, calls for 1 egg but if you reduce a recipe that calls for one egg, it is best to use egg substitute for a more accurate measurement of the reduction. Most egg substitute products have an equilvalent of measurements on the package.
Spices or herbs in a recipe are usually a small measurement. Example: if an origanal recipe called for a 1/4 tsp - you could just use the measurement in a reduction recipe as a pinch or a dash.

Recipes use a simple conversion factor. Just simply reduce by the amount of servings. Or you could buy mastercook and use the conversion tool on that program
