Thanks to the person that started this post. I haven't tried a healthy version recipe for brussel sprouts. And this post has 2 that I want to try; the roasted version with balsamic, and the shredded slaw version. Both sound yummy!! I wonder if feta cheese would be a compliment to brussel sprouts? hmm I'll try and post it back here.

Mmmmm.. baked brussel sprouts sounds yummy.. At the holidays my family makes a VERY fattening pan fried with bacon brussel sprout dish that I have YET to find a healthier way to imitate! LOL

I just had oven-roasted brussels sprouts for dinner a couple nights ago - halved, tossed in a small amount of olive oil, salt pepper and given a good shake of balsamic vinegar right after removing them from the oven. double yummmm

and yes, I too HATED these as a child. It should be a crime to boil them to macaroni-like consistency, ha ha isn't it true that as little as ONE exposure to brussels-slop can invoke trauma that lasts for years!

Another totally delicious and much maligned vegetable. My husband bakes them and then chops them with butter, sour cream and a pinch of nutmeg. Some foods are so flavorful a little goes a long way. Our problem is buying them is small amounts.

Cut in half, toss with olive oil and spices and bake them at 400 for about 20 minutes. Yummy!

I use my Ninja and grate. They make an excellent coleslaw. Add carrots or other veggies for color or taste and add your favorite dressing. This is really good.

Cut brussel sprouts in half. Coat with butter and olive oil. Salt and pepper. Roast at 400 until brown. Top with bacon and caramelized onions.

My mother mis-cooked them once when I was a child ... she probably boiled the hell out of them. And after that once disgusting experience I kept away from them for amost three decades. But when I realized (1) that they're basically small cabbages (and I like other cabbage-things) and (2) there's a correlation between liking cilantro an brussels sprouts (or disliking ... a chemist friend explained it years ago) and I like cilantro, I thought it was time to try them again, but with me doing the cooking!

Oven-roasted? Yum! Sauteed? Yum!

Another great way is:

Boil until barely tender.
Mash in a dish with some plain yogurt, black pepper and nutmeg
Stir in cooked, chopped chestnuts.
Put in oven to brown the top a little.

I was forced to try the nasty smelly green vegetable in my youth and hated them. I read the recipe for shredded brussel sprouts and decided it was time to try them again with an open mind. Much to shock they were awesome! I have made them twice now and my son-in-law eats them as well as my 7 year old granddaughter. Try them using a stir fry method and be prepared to be pleased.
