I haven't made this myself but I've done similar things in the slow cooker. Corn is pretty durable, and if you include it in the slow cooker directly from a bag of frozen corn, I don't think it would get mushy. Or, you could cook a little bit & sprinkle it on when you serve it. Or the person who made the recipe is using a salsa with corn in it. Or they accidentally forgot to include it in the recipe. I've done things like that before.
I just saw the recipe for black bean chicken on the recipes. It sounds easy so I'm going to try it out but I was curious why it shows corn in the picture (which would be great) but it isn't listed in the recipe itself. If I want the corn (and I do) when should I add it or should it be cooked seperately and stirred in later? Seems like cooking the corn for 8 hours in a crockpot it would be super mushy. Thanks for any help.
