I used spinach once -- it just *barely* worked. The leaves turn VERY delicate and get crisp much much quicker. Wasn't the best alternative but if you're really desperate, it works in a pinch :P

Basically any root vegetable makes for a good chip, though. Parsnips, potatoes, beets, winter squash...

whole foods has kale all year round. I have also seen it at some of our fresh markets. I don't normally buy it from the other general grocery chains. It doesn't seem to last as long.

I've tried collards greens, mustard greens and swiss chard-- not the same. didn't work correctly.

I think collards would be too tough, and spinach too delicate. The only thing I can think of that MIGHT work would be Swiss chard, but it's not simething I've tried. I love those sweets and beets chips, so maybe beets or large carrots as well as sweet potatoes could be made into tasty chips?

I love kale chips. However I can't always get kale. Are there other veggies that will work? I've also done sweet potatoes and parsnips. That's about it. I'm wondering if collards or spinach will work. Has anyone tried anything else?
