When I'm in the mood for something on the noodle side but don't want to use pasta, I substitute broccoli slaw. It comes already shredded and adding my favorite veggies to the this along with protien & sauce I have a wonderful dish. The slaw gives me the feel and texture of noodles.

I just it with my favorite vegetables add the slaw last to cook it slightly to keep it crisp. I add about 2 tbsp of V8 juice to create a sauce. You can anything you like. I love it with chicken or fish.

It comes packaged in the vegetable/bag salad section. Comes already shredded. Just add to your stir fry.

Another great substitute is Spaghetti squash. It also looks and feels like pasta.

Try using spaghetti squash too...it's easy and tastes just like spaghetti when you put a marinara sauce on it.
