Soup is a GREAT meal. Fills you up, and is a great way to get your vegetables in and is not carb heavy. Substitute Vegetable stock for Chicken or Beef stock, and if it is a "creamy" soup, go for pureeing instead of adding cream! 210
I steam my veg in either reduced fat chicken stock or vegetable stock. They taste super yummy! And it makes me want to eat more. another good tip is using evaporated milk(low fat) and a little corn starch to thicken sauces, it gives a really creamy texture to recipes without having to use the high calorie heavy cream.
I save all my vegetable peels, cores and ends in a gallon size bag in the freezer. When it's full, I dump it all in my crockpot with some water and put it on low for 8 hours. I would have just thrown out all those scraps, but now I have my own healthy vegetable stock!
You can add meat bones and scraps if you want too.
