Cut sweet potato in very, very thin julienne strips - par boil for a few minutes... heat wok on high, spray a wok with olive oil, add sweet potato strips... stir to evenly cook sweet potatoes...season with any type of spice that you want. (you can also wrap in foil and put on the grill!)

Serve Sweet potatoes daily because they are easy on your budget & because they have lots of vitamin C, fiber and beta-carotene. Use them to prepare oven fries, oven fries, mashed potatoes, & stews or just pierce a whole sweet potato with a fork, wrap in a damp paper towel, and microwave for four to five minutes. The fiber helps lower blood sugar by slowing the formation of glucose. They are such complex carbohydrates, sweet potatoes can help weight loss and are great for diabetics as well.
Alcan has this new (?) aluminum foil that is built with a slippery side called "Slide". Best thing EVER! Sweet potato fries don't stick to it, no oil or spray needed, and clean-up is instant! And aluminum foil can be recycled. I'm going to start using it for everything I generally cook on or over a cookie sheet.
