I prefer fresh corn tortillas for tacos, but hate frying them in oil to get crispy/soft. I now soften them in the microwave, then place shredded chicken, onions and a little cheese on them, fold them over and lay them on a sprayed cookie sheet. A quick spray of Pam on the tops and 5 minutes in a
400 degree oven gives me the crisp texture I like without all the fat.

Try homeade bean paste on white corn tortillas! They're healthy and nutritious. You can add your own veggies (like peppers) and spices (like cayanne)! Just fill up a pan (half way or so, depending on serving of beans) and add the beans. cook for 4 hours, until really soft and mushy. and then mash until you get a paste. You can buy white corn tortillas already prepared.
To add flavor, consider adding bacon bits (or bacon alternatives), salsa, or even onion.
My new favorite low sodium breakfast: Cook an egg with baking spray in a pan, breaking the yolk, and sprinkling on Mrs Dash Fiesta Lime seasoning. While that is cooking heat up a corn tortilla on another burner. Flip your egg, and when ready put it in your warmed browned corn tortilla. Easy and great. Holds me for hours with a piece of fruit. 490474
This might not save time, but it keeps the food healthy, and very tasty! To top that off we burn a few calories up on our feet moving, so add this to the twist.
Pasta, taste so good freshly made! Spaghetti sauce or marinara from fresh tomatoes and herbs, corn tortilla's from masa. Hummus from home needs less oil. If I want chips I fry flour tortilla in my caste iron; only 1 serving made. If I want dip - guacamole is made from scratch. No presevatives!
