I highly recommend finding some REALLY good AGED Balsamic Vinegar and using it for salad dressing. I know it can get expensive, but we are worth it and the taste is so good you don't need olive oil to make an awesome salad. There are flavored ones as well. This is NOT your everyday vinegar.

Buy something "gourmet" for yourself! It can be a neato kitchen tool, nice balsamic vinegar, truffle salt (expensive, but worth it!), or anything else that's healthy, exciting, and new. Treats don't have to come with calorie price tags!
I put a few drops of expensive aged balsamic vinegar on every veggie. Deliciouso!
Balsamic vinegar (especially aged vinegar) has a great flavor that intesifies and sweetens when you reduce it. Bring a small pan of balsamic vinegar to a boil and then simmer until it thickens. When it coats the back of a spoon, it's done. It makes a great salad dressing or veggie dip and is extremely low calorie!
If it's too tart or strong for you, you can dissolve a bit of sugar in the vinegar as it's heating; however, I prefer just straight vinegar.
