just on a hunch i decided not to put either a stick of butter or a third of a cup of oil when i made banana nut muffins. i decided to use some fresh fruit from the frig and i pureed it. so using a cake mix 1 egg white and 1 1/2 cup mixed fruit puree, bake as normal = best muffins ever.

Instead of making my usual recipe for Spark's yummy buttermilk cornmeal muffins and freezing the leftovers after DH and I finish a meal, I doubled the recipe and now have muffins for more 5 more meals in my freezer! 334
I use a muffin tin for pre-portioned servings of things like lean meatloaf and egg fritattas - I get really yummy food and don't have to worry about overindulging. Plus, the small, muffin-sized portions are perfect for toting to work!
