I shop on Tuesday. Sunday, I take out all the bits of leftovers, usually add some meat or beans, broth, seasonings, and make a soup for the week. I eat the soup for lunches. Its fun and I feel like I'm not wasting food.

I eat a cup of broth-based soup with a little protein in it before my afternoon and evening meals. It really helps me feel satiated faster and keeps me from going back for seconds on more caloric items. For supreme convenience I make a big batch of soup on Sundays and freeze it in single-serving containers for the week.
Soup ideas include garden veggie, chicken and barley, escarole and spicy turkey sausage, or tofu tom yum.
On the weekend, I make soup for my week's lunches. On Sunday, I take the soup, fruit, a box of greens and whatever else I need (rice cakes, peanut butter, etc.) to the office. That way I don't have to carry it on the bus each day.
