I'd heard so many positive things about Almond Breeze I bought some to make my favorite treat - SF Pistachio pudding. Pudding will not set up with Almond Breeze.

    You can try adding some extra cornstarch to it and letting it sit overnight...that helped mine a little bit.

    Did you use the kind you cook or instant? My grandson can't have anything with dairy or soy so I wanted to make him his own dessert and made chocolate pudding with almond milk and cooked it in the microwave. And it thickened like regular pudding...however, by the second day, it became quite watery. I also tried using rice milk for pudding and that definitely didn't thicken.

    I found the same thing! Although I tried it with what used to be my favorite pudding, butterscotch. I just tried pistachio pudding today for the first time and loved it! I have been experimenting eating soft foods as I am about to have my tonsils removed and am trying to figure out what I will be able to eat when I am recovering.

    I love Almond Breeze on my oatmeal but I also found it didn't work well for pudding...

    I've been using the unsweetened Almond Breeze on my cereal. It's a little bit of an acquired taste, so I add a little artificial sweetener.
