Baby carrots were "invented" buy a guy who was on a road trip and saw piles and piles of orange on the side of the road. When he got closer, he saw that they were carrots. He asked the farmer what was going on and the farmer said they were trash since they wouldn't sell at market. (See more info)
He made a deal with the farmer to haul them off for him (for a fee), cut off the bad parts, and made "baby carrots" out of them. It is actually a form of "recycling" since those piles of carrots were left to rot in the fields.

To remove the acid from spaghetti sauce, simmer on the stove and put a big carrot in there. It will soak up the acid perfectly! (My mom taught me this when she made her sauce from scratch, but it works for pre-made sauces, too.)
Use a regular carrot...not baby carrots.
