I find a lot of low-fat/low-cal, otherwise healthy recipes can be under-seasoned and bland. Additionally, many people become so afraid of "added" fats that they cut out oils and dairy that isn't fat-free. I have always joked that "Butter is what makes food taste good!"
Experiment with different seasonings; it's easier if you think in terms of international cuisines--Mexican flavours include chiles (not always hot), cumin, coriander, cilantro, and cocoa; Asian tastes include coconut, lime, Thai basil, and curry. Food can be healthy AND yummy--otherwise, why bother?
