Buy good quality pans. I no longer need oil to prevent sticking to frypan. They are more expensive, but well worth the investment

    I always 'dry fry' my veg; by that I mean I dont use any type of oil. I do add a spoonful of water, and/or a splash of light soy sauce, just to prevent burning before the veggie juices start to flow.I put a pan lid over the top so the veggies steam in their own juice. If I use the microwave, I do the same and in both cases the veg is deliciously tasty, without adding more salt than is in the soy sauce. For a change of taste, I use a splash of worcestershire sauce, mushroom ketchup or balsamic vinegar. For a really festive meal, a tablespoonful of wine makes a real difference.

    I have been using cast iron frypans and griddles for year. Need minimum oil-I use a sprayer or just wipe it using a paper napkin.
