Romano Cheese is saltier than Parmesean. Roquefort, Gorgonzola, Brie and Camebert cheeses are aged with penicillin, so if you are allegic to penicillin these may not be the best choice for you. Blue cheeses tend to be salty and sharp and get a smell that resembles stinky feet because of the mold & bacteria that grows on the cheese. Instead of using noodles, use eggplant slices. You can par boil them for a minute remove and start to layer. Ricotta cheese is low fat, has omega 3's for your brain and heart, calcium and protein.
