When you're baking muffins or quick bread or making waffles or pancakes, you can substitute applesauce (or pear sauce) or mashed ripe banana for a portion of oil. I generally sub 1/2 to 3/4 of the volume for muffins or quick bread, and about half for waffles or pancakes.

When bananas are on sale or on the reduced produce shelf....I buy them! Peel them, cut them into smaller chunks and freeze....perfect for smoothies.
Use half of a mashed ripe banana to replace an egg in recipes like muffins...as long as you don't mind a little banana taste (use a little baking powder).

I often when baking cakes, quick bread sub 1/2 the oil for unsweetened applesauce. I tried this with pancakes yesterday and it was great. Couldn't tell the difference and made the whole recipe 500 calories less.
