During the summer or on other warm days when my children want cold or cool snacks like ice cream, I let them eat frozen peas and carrots. They love it, it cools them down some, and gives them some nutrients.

Most recipes are easy to make with items you can find in any grocery store. Many can be adpated to suit one's own likes and tastes.
If you need to prepare a snack for young kids in school or whatever, try this: Get some paper muffin cups (sometimes you can find themed ones), fill them with grapes, sliced-up strawberries, blueberries and/or a pinch of dried cranberries/raisins. Teachers find it much easier to share out the muffin cups than having a bunch of grubby hands reaching into a communal tray of food (particularly if there is dip). The kids like having their own little cup too.
Try to use fruits that are relatively dry or put "juicy" fruits on top of dry ones in the cup. I made sure the sliced strawberries were on the grapes so the moist strawberries didn't get the muffin cup damp. If you're allowed dip, you can add a little dollop to each cup like icing on a cupcake.
