Every weekend I buy a large family pack of skinless/boneless chicken breasts, split them in halves and bake or grill the whole lot. Over the week I add it to soups, stews, or sprinkle seasonings to make it a main dish. It saves me SO much time on weekdays and I always have food in a pinch.

I go out to eat once a week or so and bring home half ..I always get pretty much what I want. I noticed that when I brought home leftovers and the fat was cold & congilled..made me think I will seperate as much as I can before I warm them up from now on..thus cutting down on some of the fat.
My newest treat is to blend 1 cup non fat yogurt into 1 dissolved (and chilled but not set) 4 cup package of light jello. I pour into 4 to go containers and chill to set overnight. I particularlly like orange and strawberry; reminds me of a creamsicle but so much healthier !
