I cube up or cut into small pieces fresh vegetables, any that strike my fancy. Add a can of diced tomatoes, minced garlic, sliced onions, spices - Italian or Mexican spices. Add a little fatfree chicken broth. Seal in foil, 400 degrees for 45 min. or until tender. Yum!

This sounds so good! I've only done this with olive oil and herbs over root vegetables in a cooking bag. The sauce here sounds lovely!

Roast those veggies
Roasting vegetables concentrates their flavor and it's easy to do. Even folks who don't usually like veggies will go for roasted ones b/c the natural sweetness comes out.

Just shake veggies in a bag with some olive oil and light seasoning, then bake at a lower temp for about an hour or so. Great with peppers, potatoes and carrots!
Do you have leftover roasted vegetables like onions, zucchini, bell peppers or eggplant? Don't throw the leftovers out! Instead mix these vegetables with some freshly cut herbs and olive oil and serve whole wheat warm toasted rolls or Nature's Own 100% whole wheat English Muffins or bagels. They really are 100% whole wheat!

Choose foods you LIKE or it's not going to work .. I'm NOT a salad fan but I LOVE roasted vegetables .. so I make alot of meals with vegetables and very few with salad -
It also helps to have about 10-20 "go-to meals" in the recipe box
