I use Bulghur/Oats/Quinoa/Amaranth Seeds instead of Rice with mixed Pulses/Dals to make a thick Indian stew called Khichri.I also add different fresh Vegetables and season this with 1-2 tbsps. Ghee to which I add various Dry Spices like Cinnamon Bark etc.I eat it with fresh Yoghurt and Cucumber Dip
This forms a complete Meal and one can rotate the Vegetables to suit one's taste.Use slit Green Chillies to spice it up or add dried Red Chillies to the Seasoning Ghee along with the other Spices(Khadaa garam Masala) and pour scorching hot over the dish and cover with a lid.

I've begin substituting Steel Cut Oats in traditional Indian Dishes and have found it to keep me fuller for longer Periods as well as adding taste and Fiber to my Diet.I use these in place of Semolina and Rice while making Upma,Khichri and in making Kheer too!!!The Recipe remains unchanged.
I dry roast these first in a Wok for 3-5 minutes till browned and fragrant. These can be cooled and stored in an air tight Jar to be used as and when required.Roasting prevents these from clumping together when used in making Khichri and Kheer and ensures a smooth texture and better blend.
I 26 spicy Indian food AND rice, but rice has lots of calories & pre-packaged Indian dishes don't have enough protein to satisfy me. I combine 1/2 c. brown rice (109 cal) with sauteed tofu (80 cal) & packaged Indian curry - Dal Makhani (black lentil) has 180 cal per 1/3 c serving. Total 369 cals. Spicy taste combines with protein in tofu to satisfy & fill me up, even without a LOT of rice! A side of plain yogurt with cucumbers & dill...4
Tofu is so versatile & perfect to fix for a quick meal for a single person!
