I have been enjoying canned beets in my chopped salads. To cut down on the salad dressing, I have been pouring some of the canned beet juice over the salad and adding Mrs Dash or another spice mix on top for added flavor.

One on my favourite ways to get a vegetable serving is to peel and shred/grate a beet. I add a little olive oil, squeeze half a lime or lemon into it, and I usually add some salad crunchy mix (I get it in the bulk section, it's just a mix of seeds that have been slightly toasted). It is really delicious, easy, and awesome due to the health benefits of beets!
