I know that if I save packing lunch for the morning, I am likely to oversleep or forget to pack it. But, if I make myself an extra portion (or several extra portions) of dinner and put the leftovers into one-serving per container pieces of tupperware, I don't stress about lunch in the morning.
Granted, it helps to have a microwave at work, but you can make something you can eat both hot AND cold (like whole grain pasta, pesto, tomatoes and fresh mozzarella; broiled salmon you can put on a salad). Always have spare, microwave and dishwasher safe containers handy for leftovers!
For years, I have tried packing my lunch to save $$ and eat better, but I'm terrible at sticking with it because I HATE washing tupperware. So, I bought a bottle of dishsoap for the office and leave it in the lunch room. Washing my tupperware at work on my lunch break means it's ready to use again as soon as I get home. The $2.95 I shell out for the dishsoap more than makes up for the $$ I was spending on lunch, even when other people use it and I have to replace it more frequently. Try it!
