When I have time on the weekends, I make as many different dishes to freeze as I can, using common ingredients - like chopped peppers, onions, garlic, or even white sauce. While the cutting board and knives are out, I get all my chopping done and only have to clean up once.

MORE INFORMATION:
Sometimes I just freeze the chopped veggies in 1/4 cup baggies for the next cook-a-thon, if I don't have everything I need or don't have time to make the whole dish.

    I remember reading this when it was first posted and it has stuck in my mind since. Now a year later I have finally mastered the kitchen and I try to always cut once, cook twice. Thank you!! emoticon
