I preheat a non-stick grill pan on medium heat for 5 minutes. Season a boneless sirloin or boneless-skinless chicken breast with favorite seasoning. Put the meat into the hot pan. Turn once to cook other side. The heat sears the meat and keeps it moist. I don't use any oil or spray with this method.

I thaw boneless skinless chicken breasts and cover both sides liberally with seasoning of choice. Perhaps GrillMates Monterrey Chicken or any number of homemade spice mixes. Put in a 13x9 inch pan & spray with nonstick spray. Bake at 350 degrees for 30 minutes. Always moist & delicious! 250
When we fire up the charcoal grill for steak, fish or chicken, we also grill sliced zucchini, yellow summer squash, onion slices and sliced mushrooms sprayed with a little canola oil and seasoned with Cavender's Salt Free Greek Seasoning.
