I wanted something different for a quick dinner for one this week. I always keep cooked boneless chicken breasts in the freezer. So I chopped one,put it on a small wrap (I used a whole wheat tortilla wrap - about 60 calories) with about a quarter cup of part skim mozzarella cheese (less works too -- it's really to your taste) and a couple of tablespoons of tomato sauce. I toasted it in the toaster oven til the cheese melted. It was delicious.
This was easy, tasty, filling and with the melted cheese it tasted very decadent.

The go-to food for me is a Caesar-type salad that's quick to throw together and is yummy. I cook up the chicken ahead of time (1 tsp olive oil, heated & add chicken cut in bite sized pieces - season with cajun seasoning & cook til done), and keep the other ingredients (Parm. cheese, light caesar dressing & romaine lettuce) on hand. I whipped together a delicious salad in less that 15 minutes last night.I browned chicken strips with garlic and onion powder right on the stove in a frying pan. I then tossed them in to mixed greens which I bought prewashed added oregano,more garlic and onion powder....low fat grated parm and croutons......balsamic vinegar and a touch of olive oil. IT WAS A FEAST!!! My daughter and I were full.334
