Mini challenges help me stay motivated. Instead of thinking "I will be consuming x amount of calories until I reach goal" I now break my goal down per week and tell myself I will consume x amount of calories and burn x amount at the gym this week. Breaking it down into a 7 day challenge makes it more manageable in my opion!

I always plan ahead prior to me becoming bored. Every two weeks-three weeks or so I try to change up my eating and fitness routine. I make it almost a mini challenge to find healthy food options (new) that i like and also new workouts. I also get my family involved: tell them my goal and they provide compliments/help along the way. I also ask for fitness related gifts.
I create mini challenges for myself like seeing if I can go an entire day without spending money. Then two days. It forces me to realize the little places I spend my dough but I also find I eat better because I pack lunch and my snacks for the day!
Absolute Exercise Beginners -- A Walk Around the Block is a Great Start
My hatred of exercise is slowly fading because I began doing the simplest thing I could think of--walking around my block. IN three months, I've gone from one painful circuit that took almost 10 minutes (for 500 yards) to 4 circuits that take 22 minutes. I now breathe easier and am much stronger.
I use the route map feature on my Spark People exercise page to figure out how far any distance I have to walk is--then I time it and see how long it takes me next time I walk it. These mini challenges keep me motivated.
