I buy bulk fresh chicken and bake 1/3 of it right away (store in ziploc for quick access to add to salad or take as a main dish for lunches). The remaining 2/3 I use for meals later (see below)
For the remaining 2/3, I divide into 2 gallon ziplocs and add ingredients (search google for freezer dump meals) then freeze (don't cook the chicken yet). On the day I need them, I thaw them that morning and bake that night. Just add a veggie and you're set - good food AND fast!
