Make Salads, tacos, chicken tortillas or wraps,sandwiches, chicken with brown rice and veggies and even casseroles. Great for after work for a fast meal. If I'm cooking something in my oven, I'll throw in a few split breasts with the skin removed while I'm baking my casserole or whatever. Then, when the chicken cools, I shred it for later uses. That way, I'm not using my oven just to bake the chicken and I always have cooked chicken on hand.
Roasting a chicken on Sunday gives us chicken for salads, casseroles and wraps for several days. I have purchased deli chickens which really is a time saver. Take it home, remove the skin and put in serving sizes and freeze what you are not going to eat in the net few days.
