Soup is a fantastic meal! The liquids in it help fill you up, it is full of healthy foods, and low in calories. The best part is that It leaves you feeling satisfied like you ate a much higher calorie meal. Soup is one of my favorite things to eat for dinner, especially when I need something light to eat. It's easy to make too! I try to make it for dinner at least once a week and I always have leftovers to eat for lunches.

    I make all sorts of kinds. I stay away from any cream based ones though. My favorite at the moment is a kale, potato, and white bean soup. There is lots of healthy stuff in it and I have tons of kale in my garden that I'm trying to get through. :) I got a immersion blender for Christmas so I'm SOOO excited to make pureed soups easier!
