Instead of olive or other oil, use vermouth, broth or water. If you can't do without some oil and have to watch cholesterol, use coconut oil. Flax seed oil is also good if you need oil for salad dressing or other cold/room temp recipes. Flax seed oil doesn't do well when heated.
it helps to use a nonstick pan. Use same amount of broth, vermouth or water as you would to saute' with oil. Coconut oil: it doesn't raise the choles levels. from the labwork over the years, this is true (our household was eating vegan). Great sub for butter, as it's sweet
