Look for any opportunity to add vegetables to your dish or meal. Add eggplant to your pasta sauce, add tomatoes and spinach to your morning egg white omelet, serve your dinner over a bed of greens, replace crackers with cucumber slices. Get creative. Be sure to have "friendly" vegetables on hand.
