Making a side salad can take a lot of time. Instead, purchase a cheap compartmentalized serving tray with a lid (less than $5 at Walmart), cut up your lettuce and a few veggies of your choice and keep them in the fridge in this serving tray.

I found a basic serving tray at Walmart or a dollar store. I chop up lettuce, tomatoes, onions, cukes, etc. That way they are always ready to go and I am not washing and preparing a salad for a half hour each meal.

I've done this in the past but kinda have forgotten about it. Super great idea, and I increase my veggie consumption because it is all so convenient. Thanks for jogging my Memory :-)

Have a "Chop Fest"!
Every 2-3 days have a "chop fest"! Fill a few tupperware boxes with lots of washed and chopped/sliced salad and veggies e.g. lettuce, carrots, cucumber, onions, mushrooms, peppers, baby tomatoes, corn, peas, beans, little broccoli florets, bean sprouts and so on.
Then anytime you want to prepare a quick salad, or stuff a pitta bread or add a few veggies to a stir fry - they all all ready for you! Like your own private salad bar!
As soon as I come home from shopping, in one big go I tear/cut, wash, spin veggies like lectuce, onions and peppers and put into ziplock bags and then in the fridge. The same goes for messy fruits like melon and pineapple.

With all the fresh fruits and vegetables prepared and washed it`s so much easier to make a quick salad or get out a quick snack or dessert of fruit.
I found at my local grocery they clear out the days leftover cooked roasters, turkey breasts ect at 1/2 off after 7:30 PM It happens that's when I walk by and if they have some I'll pick one or two up. at 3.50 a bird they cost less than if I bought it and cooked them myself.
