Using a crock pot is a great way to stay healthy when you have a busy hectic lifestyle. You get great flavor when you let the ingredients meld together all day long. You can monitor what you put in, and because it cooks all day you don't have to put as much salt in to get the flavor you want.
I found that evenings were bad for me with a toddler and an infant. I'd just be getting off work and they'd both want attention. Not to mention all of us were tired. Why spend time cooking then, when I can have it ready in the crockpot!
