Getting The "Freshness" Out Of Meats

Try this before seasoning and cooking your meat or fish. To get the freshness out of your poultry or seafood place contents in a bowl fill with a little water and squeeze a lemon or lime (juice) in it let sit for 5 mins and rinse. IF you dont have lemon use 1/2 cup flour make sure the water is covering your meat before adding flour. Use your hands to break down the lumps in the water and mix your meat. Rinse well & You can now season your meat and cook.

    Yes that true, in the Caribbean when we season meat/fish we use lime/lemon juice and a bit of salt to season. If no lime you can use white vinegar and salt. When its marinated a bit wash off that mix and add what ever additional seasoning like garlic, chive or what ever you fancy to get additional flavour!!
