Use a belgian waffle maker to cook up a quick omelet. Spray with olive or canola oil. Use 1/2 cup egg substitute. You can add spinach, mushrooms, onions, green pepper, turkey bacon, turkey sausage, etc. Allow to cook about 2 minutes then check....time may vary. Remove to a plate and top with a little bit of your favorite cheese and then fold and put a little bit more cheese on top (no more than a serving total though). It makes a quick, easy, fluffy omelet in no time.
