Here's a tip to keep your hands (relatively) clean while shaping hamburger patties: Wet your hands before you start to handle the ground meat. The patties will be more pliable, and your hands won't pick up nearly as much grease or food particles.

I've found ground turkey breast to be too lean for burgers, but ground turkey is a bit too fatty. So, I combine equal amounts of each, then form the patties. These turkey burgers are just right, not too lean, not too fatty. I make a lot, then individually wrap the patties and freeze them.
Adding an onion and garlic puree to lean beef or turkey when making burger patties makes for juicy and flavorful burgers! Simply take the onions, garlic, and other seasonings if desired, that you would normally chop and add to the ground meat and puree in blender or food processor. Mix completely and grill or prepare as desired!
