To keep myself on track for the week I cook several items on Sunday to use for quick meals during the week. I boil 6-8 eggs and keep them at eye level for quick breakfasts or snacks. I cook a couple of chicken breasts and cut them up for salads or wraps. I cook some dishes like salsa chicken and turkey meatballs. This has really helped on busy weeknights to know there is a quick meal at home and no excuses to pick up fast food.

Meals cooked to help you eat healthier throughout the week
I cook three meals on Sunday, that I know will be good til Wednesday. Sometimes, the meals that I cook Sunday evening can be converted to another meal, for Thursday evening. It helps on the budget and on eating out
After working a full week, Friday nights are my time at home to plan my menu for the workweek. Saturday is grocery shopping day, Sunday morning is for church, and Sunday afternoons are for prepping foods for the work week, and cooking a main meat to eat off for a few days.
Ex. By cooking a roast or whole chicken or salmon on Sunday, I have enough meat from which to make meals for 4-6 days.
