The only carb in chese is lactose. All hard Cheese is lactose free or just about free! All cheese is low carb. Just watch the sodium. Horizon Organic String Cheese, Cabot 50% reduced Fat cheddar and they have other varities. Sargento Reduced sodium mozzarella. Traders Joes Sliced Lite Provolone is good too!
Romano Cheese is saltier than Parmesean. Roquefort, Gorgonzola, Brie and Camebert cheeses are aged with penicillin, so if you are allegic to penicillin these may not be the best choice for you. Blue cheeses tend to be salty and sharp and get a smell that resembles stinky feet because of the mold & bacteria that grows on the cheese. Freindship brand has a no salt added cottage cheese. Alpine Lace has 3 low sodium versions, mozzarella, fresh goat cheese, and fresh ricotta.
I have found that reducing sodium and cutting out sodas has really helped me with my weight loss. I just quit buying sodas all together and I gradually started reducing my sodium levels by using lots of other spices. Oh it was no easy task but I can tell a big difference in my life.
