Using The Core Of The Pineapple

When we buy a whole pineapple and peel/core it to serve, we save the core and put it INSIDE a chicken or turkey while it's being roasted. GREAT flavor, keeps the bird moist and tender, and uses up what otherwise would have been thrown away.

    Since the pineapple core is highly acidic, it would be great to throw in a simmer-pot of bones for stew/broth, as it would leach out the calcium and help dissolve cartilage.

    Brilliant! I usually just leave the core on the wedges of pineapple and eat it but this is a great idea. You inspire me to go out to get a pineapple AND a chicken! But maybe after meatless March....

    If you have a Vita Mix blender you can grind the whole thing! Not wasting any nutrients.
