I LOVE poached eggs for breakfast and a fast and easy way to poach them is in the microwave. I get a bowl and fill it about 1/3 with water and heat it for 2 minute in the microwave. I then crack open two eggs into the water and microwave for another minute. Once done, I gently pour out excess water and then add salt and pepper to taste. YUM!
I especially love poached eggs over quinoa and herbs or mixed with crumbled saltines.
I saw CocoMama Quinoa ready to eat cereal at Whole Foods and was excited to give it a try. I'm not a huge fan of Quinoa but the flavors, Cinnamon Banana and Wild Blueberry sounded sooo good. Tried it...not so much. The cereal is overly sweet and the sweetness does nothing to mask the bitterness of the Quinoa. If you like Quinoa then you may like this, but it's not for me.
Wild Blueberry Flavor ingredients: Water, wild blueberries, coconut cream, organic quinoa, pure maple syrup, lemon juice, sea salt, cinnamon. 220 cal, 8g fat, 6g sat, Sod 180mg, Carbs 31g, Fiber 2g; Sugars 13g, Protein 4g.
I mix 1/2 pkt Hidden Valley FF Ranch mix, 1 Cup FF sour cream and a little horseradish (I like that zing) and keep it in my fridge, along with a bag of tri-color Coleslaw mix. 1 Cup Coleslaw + 1.5 Tbspoons of dressing is a great side salad at lunch, or for a snack. I love that coleslaw mix is low in carbs!!!
