Perfect Dinner-Stuffed Pepper!




Dinner with a friend reminded me about the stuffed peppers of my youth. For one week, I've eaten a vegetarian stuffed bell pepper for dinner each night and I've lost 4 lbs already! Brown rice, black beans, salsa, lots of garlic inside a green or red pepper. Heat in the oven for 30 min. A little cheese on top. Really tasty!
