Dinner with a friend reminded me about the stuffed peppers of my youth. For one week, I've eaten a vegetarian stuffed bell pepper for dinner each night and I've lost 4 lbs already! Brown rice, black beans, salsa, lots of garlic inside a green or red pepper. Heat in the oven for 30 min. A little cheese on top. Really tasty!

Over the summer I go to a local farmer and buy large quantities of fresh produce, make salsa etc. and buy aluminum pans from the Dollar Tree (like take out containers) and make pans of fresh eggplant parm or stuffed peppers and label with a sharpie and freeze them. Then over the winter when I need something for dinner I can take one out and toss it in the oven. Its all fresh local produce and meats, easy and delish!
I have replaced almost all traditional bread, crackers and chips for dipping with vegetables. This has been a HUGE benefit because i'm fitting in more vegetables, especially RAW organic vegetables into my daily diet. I don't mean "Grab your celery People" I mean PEPPERS!! and NOT Green. My my ultimate switch is Peppers. Those little orange, yellow and red sweet peppers. I use them all the time in place of bread, crackers and pitas. I scoop, hummous, tuna fish and CHILI!!! Delicious!! These peppers are perfect for snacking and meals, very filling and satisfying.
