I love substituting spaghetti squash for any pasta!!! Use it in soups, pour sauce over it, MMmm!! Just cut a medium spaghetti squash in half lengthwise, scoop out all the seeds and gunk (like you would a pumpkin on Halloween), place face down on a tin foiled-lined baking sheet. Bake until the skin just starts to get brown tinged SLIGHTLY.. then carefully flip it over, run a fork over the inside and the most perfect spaghetti noodle-shaped pieces come out!!! Throw them in a bowl and use your favorite sauce or throw in a soup. Great for leftovers, too! Full of vitamins and minerals.. without other junk that some gluten free pastas can have! My dog LOVES spaghetti squash too, and it's good for his coat :-D

I just started cooking spaghetti squash in the microwave. Prep like always except place on half on a regular plate, NOT A PAPER PLATE! ( fire) and nuke a larger 10-12 min. a small 9- 10 min.! It comes out fantastic and no extra cost of turning on the oven!

I want to use more spaghetti squash. I love it. I want to make several dishes using it. If they serve spaghetti at VBS this summer, I want to make it for me and at least one child. Thank you for posting this recipe.

I tried a recipe where you substituted cooked cauliflower for mashed potatoes and it was wonderful. Now I substitute cauliflower in all my potato recipes.
